A recent study by the Madras Diabetes Research Foundation has found that consumption of ultra-processed and fried foods can lead to chronic inflammation, insulin resistance, and type 2 diabetes in overweight/obese Asian-Indian adults. These foods are rich in Advanced Glycation End-products (AGEs), which accumulate in the body over time and are linked to chronic diseases. Diets high in AGEs include red meat, fried foods, bakery products, and sugary foods, while low-AGE diets consist of green leafy vegetables, fruits, fish, and brown rice. The study suggests that following a low-AGE diet may help reduce diabetes risk by lowering glucose levels and inflammatory markers in the blood. The rise in diabetes in India is attributed to unhealthy diets high in AGEs and a sedentary lifestyle.
